Award-winning chef delivers a fresh and flavourful fusion
Perfect balance is often hard-won and it is fascinating how the flavours of such disparate cultures are successfully merged.
Head Chef and owner at Cocotte Dining, Shunichi Tanabe was born in Tokyo. It was here in Japan where he spent the beginning of his career honing his culinary skills and techniques under the guidance of the strict master chefs at several traditional Japanese Kaiseki cuisine restaurants.
There, his talent as an emerging young chef was recognised, winning him a number of awards.
He moved to Australia in 2002, and upon arriving at the Gold Coast was instantly inspired when he met great chefs and discovered products that he had never seen before.
It was not long before Shunichi began to uniquely combine his traditional Japanese cuisine with modern European and Australian cuisine. The result – Cocotte, a fusion of authentic Japanese and French cuisines, where the focus is on the purity of the natural seasonal Australian ingredients.
The interesting thing about Cocotte Dining is that not many people know about it – established in 2011, it is a surprisingly well kept, hidden secret, an unassuming Gold Coast gem, and a culinary surprise.
